Pasta with Nut Sauce and Raisins

Pasta with nut sauce and raisins

Ingredients

cup walnuts

cup pine nuts

3 garlic cloves, sliced

teaspoons oregano, dried

tablespoons olive oil, plus more for covering the jars

½ cup golden raisins

salt, to taste

black pepper, freshly ground, to taste

400 g spaghetti (or pasta of choice)

½ cup Pecorino cheese, grated

parsley, for garnish

Method

1. Nut mixture: : Place the walnuts, pine nuts, and garlic in a food processor and pulse to a fine chop. Add the oregano and pulse a few more times to combine.

2. Nut-raisin mixture: Heat the olive oil in a medium-sized pan over a medium heat. Add the nut mixture, the raisins, and salt and pepper. Cook for about 5 minutes, stirring constantly.

3. Cook the pasta in salted boiling water until al dente. Set aside about a cup of warm pasta water. Drain the pasta and toss with the nut/raisin mixture. Add some warm pasta water to loosen the mixture and give it the desired texture. Season with salt and freshly ground pepper and serve immediately.

4. Garnish with the cheese  and parsley.

Serves: 4 to 6
