This evergreen dressing is versatile recipe.. It can be used  on salads, especially over lettuce, or as a light spread on  bread. Served next to grilled chicken smoked trout or salmon.

The Evergreen Dressing


10 large flat basil leaves

3 tablespoons chives, chopped

2 tablespoons cilantro, chopped

¼ cup flat-leaf parsley, chopped

2 fresh green onions, white and green parts only roughly chopped

½ avocado

2 tablespoons honey

2 tablespoons white wine vinegar

¼ cup lemon juice

½ cup extra virgin olive oil

½ cup water

coarse sea salt

pepper, freshly ground


This will make your heart chakra radiate!

Combine all the ingredients in a blender and blitz until puréed. Use this dressing to dress your lettuce salads, to add a special twist to a chicken salad or even, as an appetizer spread on a slice of fresh farmers bread. Keeps well in the refrigerator stored in an airtight container for up to a week.

Makes 2 cups
