Scrambled eggs with goat’s cheese

Fresh eggs are the marvellous gift of chickens to humanity! What would our unhurried weekends be like without scrambled eggs?  Experiment with various herbs or even coarsely chopped baby spinach;  instead of goat’s cheese substitute cream cheese for an everlasting egg-love!

Scrambled eggs with goat’s cheese

Ingredients:

8 organic eggs

½ cup of fresh herbs (chives, mint, parsley or a mix) chopped

sea salt, to taste

black pepper, freshly ground, to taste

100 g soft goat’s cheese or cream cheese

1 tablespoon butter, unsalted

Method:

1. Whisk the eggs, 1/4 cup of herbs, salt and pepper in a bowl. Stir in goat’s cheese.

2. Melt the butter in a 25 cm non-stick frying pan over a moderate heat. Add egg mixture and cook, stirring until just cooked through.

3. Serve the scrambled eggs sprinkled with the rest of the herbs and some pepper — freshly ground.
